You can add all of your favourite salad vegetables, cheese and dressing. I like a crisp leaf, like cos lettuce or baby Gem for my bed of lettuce, with cucumber, sliced peppers, salted tomatoes and some cheddar cheese, with a nice creamy dressing (Caesar salad dressing makes a great option), or just some salad cream. It’s one of my go-to lunches or easy dinners. 

You could also add things like bacon bits, dried cranberries, sour cream, greek yoghurt, and a variety of lettuce leaves. 

I’m quite happy to eat a chicken salad on its own, and there’s absolutely nothing wrong with a side of chips (either the potato variety if you are British, or the crisp type!) or even just a simple piece of bread and butter. But there are so many other options.

Whole Grain Crackers Or Bread

I really like a side of crusty buttered bread with most things. It adds some texture and a more filling element to a meal like a chicken salad. It also gives you a chance to make your own mini salad sandwich at the table. 

Wraps are good for this too, and pitta bread is an excellent option. 

For something different, wholegrain crackers add a new flavour and a satisfyingly crunchy texture.
